To pickle this vegetable, you will need: 1 liter of water, 100 g of sugar and 50 g of salt, 100 ml of vinegar and the onion itself.

When pickling, use the white part of the onion, rinse it well under running water. Then blanch the vegetable for 1 minute in boiling water. Next, we put it in sterilized jars, and bring the water (in which it was blanched) to a boil and add salt, sugar and vinegar to it. Calculate the amount of liquid so that it is enough to fill the glass containers on the "hangers". Boil the marinade for about 3 minutes and pour it into jars. We roll up the container and turn it upside down.

Canned leeks are an excellent preparation for the winter. For it you need: 250 ml of water, 150 g of honey, 100 ml of vinegar, bay leaf, 2 chili peppers, 1 tsp. salt and 2 kg of onion. Some gourmets also add juniper (6-7 berries). Leek washed with water, cut into pieces. The marinade is boiled for about 5 minutes after boiling. The onion is placed in a wide container and poured with the resulting brine. The container is covered with a thick cloth or towel and left at normal temperature overnight, after which it is boiled again and filled with sterile jars for seaming.

  • The earth during such manipulations should not be between the feathers of the onion.
  • Next, cut off the roots, but do not touch the bottom.
  • We remove all yellowed, diseased leaves, and leave the healthy ones on the plant.

This completes the cleaning of the onion. After that, you can start storing and harvesting vegetables for the winter.

Leek can be stored in the following ways:

  • fresh
  • Dried
  • Frozen
  • in salt form
  • Pickled
  • In sand
  • In a refrigerator
  • in the cellar
  • On the balcony

As you can see, the choice is quite wide. Now in more detail about the method of storing vegetables in the sand and in dried form:

  • In order to store a vegetable in the sand, you will need to get boxes, containers, in extreme cases, you can use packages
  • Sand should be poured into the selected container. In this case, the sand should be slightly moistened.
  • The layer of sand should be about 5 cm
  • Now we insert the onion into the sand, you need to keep a small distance between the plants
  • All the place that we get free between the onion is also sprinkled with sand
  • Then we send our vegetable to a cool, but always ventilated and dark place.
  • In the same way, you can store leeks in a greenhouse. To do this, you need to make a not very deep trench and place the onion in it, then sprinkle the vegetable with sand
  • At the same time, you need to monitor the temperature in the greenhouse, it should not fall below + 1 ° C

Dried leeks can be stored as follows:

  • Wash the leeks and let the water drain
  • Next, you need to chop the vegetable. You can cut the onion into circles, strips or any other pieces, but it is desirable that they be as small as possible.
  • We shift the vegetable to a baking sheet, evenly distribute it
  • We send the baking sheet to the oven and dry the leek for about 2 hours at a temperature not exceeding 45 ° C
  • With this method of heat treatment, the onion retains all its beneficial properties.
  • If you do not want to dry the vegetable for 2 hours, you can use the so-called quick methods. At the same time, the onion is dried for literally half an hour, and the temperature is maintained within 150 ° C. It is important to note that this method is less useful
  • After drying the onion, transfer it to a glass container and cover with parchment paper. Do not close the lid

Leek - storage for the winter in the cellar

Most often, the already familiar method with sand is chosen to store leeks in the cellar, however, experienced gardeners say that instead of sand, you can also use ordinary soil from the garden on which the vegetable grew.

  • This onion should be stored in this way only in a vertical position, since leaving it in a horizontal position, we will get a vegetable curved to the top. It turns out so because the leek grows and stretches upwards.
  • Regarding what you can fill the vegetable with. As mentioned earlier, you can use ordinary soil, river or ordinary sand. Whatever you choose from this list, it should be slightly moistened. However, please note that excessive soil moisture will cause plant roots to rot.

  • About roots. They also need to be prepared. You can cut the roots by 1/3, 2/3 or not cut at all. The main thing that cannot be done is to remove the roots completely, because in this case the onion will rot.
  • We also bring the leaves back to normal. You can leave them uncut, cut to 1/3, 2/3. But keep in mind that completely uncut leaves will turn at least half yellow. You can’t cut them completely, because they feed the false bulb.
  • It is also important to say that it is not necessary to place the plants in soil or sand. You can put the onion in an upright position in a container with a slatted bottom and place it on the selected soil.
  • When storing onions in this way, do not forget about maintaining a certain temperature and humidity. Be sure to ventilate the room even in the cold season.

Leek - storage for the winter in the refrigerator

Another common storage option for this vegetable is storage in the refrigerator:

  • During such storage, all processes in the vegetable slow down, so its decay will not occur for about a few weeks.
  • To use this method, take the most beautiful and healthy vegetables.
  • Rinse the onion and then dry it
  • Take the bags and place about 5-7 stems in each
  • Send the vegetable to the refrigerator
  • To prolong the shelf life of a vegetable, refrigerate it first.

  • Next, pack the onions in bags, cling film. It is important that the plant can breathe, so make small holes in the bags or purchase special
  • Next, send the onion to the refrigerator
  • Maintain a constant temperature in the device, which should not exceed +2°C
  • If it is difficult to create such conditions in your refrigerator, then put the bags of vegetables on the shelf that is closer to the freezer
  • Storing in this way will give you the opportunity to enjoy fresh onions for several months.
  • Remember, the lower the temperature, the longer the shelf life of the vegetable will be.

Is it possible and how to freeze leeks for the winter?

This method of storing vegetables is very popular among housewives. The thing is that frozen vegetables are stored for quite a long time, while defrosting them, we get an almost fresh product.

  • Unfortunately, not all vegetables can be stored in this way, however, leeks are not included in the list of the latter and are perfectly preserved in the freezer.
  • This method of harvesting onions is very simple and does not require much effort. First, take a whole leek and rinse it well.
  • Next, dry the stems of the vegetable and proceed to chopping.
  • We cut the onion into rings, while their size can be adjusted at your discretion, focusing on what you will use this product for later.

  • When the whole leek is chopped, place it on a cutting board or baking sheet and freeze a little in the freezer. We do not recommend immediately freezing vegetables in bags, because the rings will freeze together and this will make it difficult to use them in the future.
  • When the pieces of stems are slightly frozen, we pack them into bags. It is advisable to freeze one portion of the onion in one bag, so that after it it is convenient to use the vegetable and not spoil it with constant temperature changes.
  • After that, put the bags in the freezer.
  • It is best to keep the temperature at -6°C.
  • With this method of storage, onions will be suitable for consumption for 6-12 months.

Harvesting and storing leeks

Agrotechnics and preparation for storage

When growing leeks, it is better to immediately allocate a separate bed intended for long-term storage for the winter. Leaves should not be plucked from plants in this bed during the season.

The growing season of leeks is long, so the crop is harvested just before the frost. Plants carefully dig in, trying not to damage the bulbs and avoiding lumps of earth between the leaves. Feathers are cut to a length of 25 cm to reduce moisture loss. The roots are shortened, leaving no more than 2 cm. Large adhering clods of earth are cleaned off with their hands. If you just take the stems and try to shake off the bulbs, winter storage can end up spoiling the entire crop.

ON THE PICTURE: Leek roots must be thoroughly but gently cleaned from the ground.

Prepared stems with leaves are transferred to cellars or apartments.

Some part of the crop can be left to winter in the garden, covered with agro-cloth. Leek will overwinter excellently if the temperature under cover does not fall below -6 ° C.

ON THE PICTURE: Some of the leek crop is perfectly preserved in the beds with good shelter for the winter.

How to store leeks after harvest

Savings in the cellar

The leek stored in the cellar for the winter is stored at a temperature of -1–+1°C and a relative humidity of 85%.

A box without slots is covered with sand by 5 cm, a dug leek is vertically placed on the bottom and sand is added to a height of another 15 cm. Only the tops of the cut feathers will be visible from the box. In this form, the crop remains fresh and juicy for six months.

For better preservation it is important to use the right sand: Slightly damp, but not wet. If you take moistened sand in the palm of your hand and squeeze it, the lump should disintegrate. Under these conditions, buried greens will not dry out and rot.

The crate of vegetables is checked periodically. If the ends of the feathers have dried out or become covered with bloom, the diseased plant is removed with some sand to prevent the spread of infection.

Wintering leeks at home

Storage of bulbs in the apartment

At room temperature, the greens stay fresh for one week. To do this, 5–10 stems with feathers are folded into a bundle and wrapped with perforated plastic wrap.

ON THE PICTURE: When storing leeks in bags, it is important to remember to cut ventilation holes.

Leek in the fridge

If the refrigerator has an intermediate chamber that maintains a temperature of -1 to -3 ° C, green onion feathers will remain in excellent condition for two months.

For long-term storage of leeks, partial processing of the crop using one of the methods described below is necessary.

Drying

A cylindrical leek bulb is used for drying. It is cleaned, cut into thick rings, divided one ring at a time and transferred to a sieve. Dry for four hours, maintaining a temperature of +60°C. Dried rings are stored in a tight sealed container. It is convenient to use glass jars with polyethylene lids.

ON THE PICTURE: This is what a leek looks like after drying.

Green feathers can also be dried. Then they are crushed in a blender and used as a seasoning for soups and vegetable stews.

Salting

Green onion feathers are salted as follows:

  1. Cut the feathers into pieces of 2-3 cm.
  2. Placed tightly in an enamel pan.
  3. Sprinkle with salt: per 1 kg. green onions take 50–70 g of salt.
  4. Add bay leaves and allspice peas.
  5. Leave under oppression for 2-3 weeks.
  6. Transfer to jars, cover with plastic lids and transfer to a cool place for storage.

Freeze

Leek does not lose its flavor when frozen. Before freezing, the leaves and stems are washed, dried on a towel, cut into pieces, put in bags for freezing with a layer no thicker than 5 cm and placed in the freezer.
ON THE PICTURE: It is better to freeze leeks in portions, in small batches.

Storing leeks at home or in the cellar does not require much effort from the gardener. With a little effort, you can pamper yourself and your family with fresh healthy herbs all year round.

Not everyone knows how to store leeks, despite the fact that this onion is becoming more and more popular from year to year. This article focuses on how to store leeks and everything related to it.

Leek can be stored in several ways, but not all varieties are suitable for long-term storage. About which varieties of leeks are suitable for growing in temperate climates and which ones are good for long-term storage, I will also tell in this article.

So, I'll start with some features of this bow.
Leek is a biennial plant. In the second year, it blooms and produces seeds.
The leaves of the leek are formed until late autumn, since this plant has practically no dormant period. Despite the change of seasons, leek leaves remain juicy, fleshy and tasty. Only late-ripening varieties have stiffer leaves, but these plants are more frost-resistant.

You will harvest a good crop of leeks in the first year if you grow them through seedlings. By sowing seeds directly to the garden, this plant is grown only in warm regions, since leeks have a long growing season. Although there are some varieties that are early ripe, even they are mainly grown through seedlings. Learn more about growing leeks. There is another option to do without seedlings. For example, you can try sowing leek seeds before winter. Read about the reception of winter sowing.

When to harvest leeks and how to prepare them for storage

The timing of harvesting leeks depends on the variety you planted.

By the way, you can feast on tender leaves and stems of leek almost from the very beginning of its growing season. True, in this case it will be small and, of course, not suitable for long-term fresh storage (this is the case if you remove the plant along with the stem).

But you can only harvest leaves (feathers) without a stem. Just do not be greedy, it is better to cut the leaves of those plants that you do not plan to send for long-term storage. You can even designate for yourself the plants that will go fresh for winter storage and do not touch their leaves.

Harvesting leek feathers can be done throughout the growing season, which ends with the onset of cold weather. Leek leaves are cut off, yellowed and dried leaf areas are removed. Then they are washed under running water and dried from excess moisture. To dry, place the leaves on paper towels or gauze, preferably somewhere in a dark place.

After the excess water has drained, the onion can be cut into rings, strips (as you like) and placed in storage in the freezer. You can also dry chopped leeks, which you will later use along with other herbs as a seasoning for dishes.

Well, when to harvest leeks for winter storage of succulent stems? Here the limitation is set by severe frosts. The leek needs to be harvested before winter sets in. Of course, you can cover the leek and store it in this way and clean it up when you need it for cooking. But it’s better to remove it from the garden and hide it from frost.

Leek harvesting is carried out according to the following scheme:

  • digging;
  • easy cleaning from the ground and pruning of the roots;
  • storage bookmark.

I want to note that digging and peeling leeks should be done carefully so that the earth does not get between the leaves. You need to trim the roots only partially, without damaging the bottom. Leaves do not need to be cut, as this can lead to faster wilting. Also, trimmed leaves make leeks more vulnerable to diseases.

Well, the harvesting of the leek is done, it's time to start storing.

How to store leeks?

Leek can be stored in several ways:

  • fresh (in the sand, in the refrigerator);
  • dried (used as seasonings);
  • frozen (can be used for various dishes, except for fresh salads, of course).

How to store leeks in sand? It should be noted that we put it in storage immediately after cleaning. The best conditions for storing leeks are 85% humidity and temperatures from -1 to +1°C. To store leeks in the sand, you should take a box with the expectation that it will be about 15-20 cm filled with sand. Pour sand on the bottom of the box with a layer of up to 5 cm, then install leek stalks in vertical rows, and pour a 10-15 cm layer of wet river sand between the rows. This will keep the leek for 5-6 months. In addition, in this form, the leek will be even.

Leek storage is also possible on the balcony. If it is well covered, then it will easily endure frosts down to -7-10 degrees.

During storage, check the plants occasionally, as they may become sick or dry out. Such plants should be removed in order to preserve others.

It is possible to store leeks in the refrigerator. To do this, you need to choose the best plants from your crop. Strip them, trim the roots and leaves and refrigerate. It is necessary to cool to a temperature of -2 ... +2 ° С without any packaging - since this is an auxiliary stage for further storage. Then quickly pack the chilled stems into perforated plastic bags. You can put no more than 8 stalks of leeks in each bag.

In the refrigerator, you can store leek for 4-5 months (provided that you prepared it as described above). It is important that the temperature does not fall below -5 ° C, but modern refrigerators are reliable and do not present such “surprises”.

Frozen, you can also store leeks all winter. To do this, put the prepared chopped leaves and stems in a thin layer - up to 5 cm - into freezer bags and place in the freezer. For information on harvesting and preparing leaves and stems, see When to harvest leeks and how to prepare them for storage above.

You can dry the leeks in the oven or in the dryer. It is in this case that the maximum of useful substances will be preserved. It is best to dry at lower temperatures (up to +50°C). But some housewives dry the express method, namely for 20 minutes at 140-160 ° C.

Leek varieties

There are different types of varieties. If you want to get greens earlier, then you should grow early ripe varieties of leeks :

  • "Goliath"
The growing season is 130 days. The productive part is from 150 to 210 grams per plant. You can harvest from July.
  • "Kilima"
The growing season is 150 days. The productive part is from 145 to 205 grams. You can harvest from mid-July.

Remember that these varieties store worse than other variety groups, although their yields are much higher.

Mid-season varietal group inferior in yield to early ripening, but such onions can be stored for storage. Varieties of this group can be stored until spring.

  • "Columbus"
The growing season is 155 days. The productive part is from 300 to 400 grams. The taste qualities are excellent.
  • "Tango"
Vegetation period - 150 days. The productive part is from 200 to 250 grams. The variety is frost-resistant.

Late-ripening varieties of leek can be stored until summer, but their green quality is much lower (they taste spicier and a little harsh). Also, these varieties have significantly lower yields than the first two groups.

  • "Karantansky"
The growing season is from 170 to 180 days. It has excellent taste qualities even with the onset of frost. You can harvest from mid-September. Productive part - up to 200 grams.
  • "Elephant"
The growing season is from 185 to 210 days. The variety has a spicy taste. The productive part is about 200 grams.

By the way, do you know how to store onions? Find out about some methods.

That's all for today. I hope the information was useful to you. Let the leek, which can be stored in various ways, be a frequent guest on your table in the autumn-spring period.
How to store leeks is a matter of the past for you. And if you know more ways to store leeks, feel free to write in the comments.

I advise, dear readers, not to miss the publication of new materials on this blog.

There are many types of onions - onion, Yalta red onion, feather onion and leek regularly appear on our table. The latter became popular not so long ago, but almost immediately fell in love with domestic cooks and housewives. Pleasant taste, beautiful color, convenient storage and cutting form - what else do you need? And if you add useful properties to these advantages, then you get not a vegetable (or greens?), but just gold!

A bit of history and encyclopedic information

Leek belongs to the onion family and is an annual herbaceous plant. In our area, it is customary to conditionally divide onions into two parts (by analogy with onions) - the roots are a vegetable, and the tops are greens. But, as you understand, this is not entirely true.

In height, leeks grow up to half a meter, sometimes up to a meter. Its leaves are bright green, with a grassy or bluish tint, the flowers are collected in umbrella inflorescences, they can be white or pale pink. The root, which is also a bulb, has an elongated shape, the stem comes out of the middle and forms linear-lanceolate leaves.

Leeks are native to the Mediterranean. Its wild, uncultivated predecessor, the grape onion (Allium ampeloprasum), grows there. The cultural form appeared a very long time ago, presumably it was known in ancient Egypt, Greece and Rome. At that time, the leek was an important plant, constantly eaten.

Today it is grown commercially all over the world. In Russia, leeks grow well in the southern regions, to the north it is cold.

Popular varieties of leeks

"Karatan"

This variety of leek is considered late. It ripens later than other varieties, but it increases its green mass until the very cold. The "leg" of the onion has the shape of a cylinder and is 18-22 centimeters long.

"Mercury"

This variety is most often found on vegetable counters. It is unpretentious, grows well, resistant to cold. The taste is pleasant, not harsh.

"Bulgarian"

This variety is considered a relative of "Karatan" - it is just as late and resistant to frost.

Leek needs very careful processing before cooking. Often, sand, dirt, dust gets between the leaves, so the onion should be thoroughly washed under running water. To make it better, it can be cut into halves.

Harvesting leeks

In the month of August, leeks begin to be dug up for summer use, but for long-term storage they are removed from the ground only by mid-October. When digging, try not to damage the stems and leaves. Old, dirty leaves are removed, the rest are cut off by about two-thirds, and the roots are reduced by half.

Leek storage

In this form (with cut but preserved roots), leeks can be stored for 2-3 months at zero temperature - in the refrigerator, basement, cellar. If you "land" it in a box with wet sand, then you will be able to keep it until spring. Wrapped, covered onions can also be stored at sub-zero temperatures, for example, on a balcony. Frost of 5-7 degrees is not terrible for him, provided that he is packed and covered. Frozen leek does not lose its beneficial properties, so it can also be stored in the freezer.

And here fresh leeks without roots and with heavily trimmed tops in the refrigerator can be stored for only a week. Although in this form it can be frozen - whole or cut into rings.

You can save leeks in this way - just dry it and turn it into seasoning. This is best done in an oven or microwave. Even with such manipulations, all its benefits will remain - is it not a miracle?

And, it should be noted that only leeks can become even more useful from storage - the concentration of vitamin C in the white part of the onion during long-term storage increases one and a half times!
