There is a recipe for a sponge cake from a package of “Sand Cake” that I read in Rabotnitsa a long time ago:

Mix 3 eggs, half a glass of granulated sugar, a little salt (so that the eggs disperse better) with kefir or yogurt, so that this mixture turns out to be half a liter. Melt 150 g of margarine, pour into the prepared mixture and add a pack of this very “Sand Cake” + 2 tablespoons of sugar (with a slide) + 3 tablespoons of flour (also with a slide) + half a teaspoon of soda (without a slide). I have been using this recipe with all sorts of variations for many years.
About variations:

3. Thick, delicious pancakes with holes. Flour (3.5 cups), kefir 3 cups, 2-3 eggs, 1 tbsp. sugar, 0.5 tbsp. l. salt and soda. Mix eggs, salt, sugar and kefir, add flour and soda. Mix well. Heat the frying pan and bake. Makes 20 pancakes, 50-70 g each. This goes well for Sunday breakfast.
4. Pancakes with cottage cheese. An absolutely waste-free recipe. :-) From all the curdled milk that you have accumulated, cook cottage cheese in a water bath. Separate the cottage cheese with a sieve. While it cools, bake thin pancakes. 1-2 tbsp. whey that is left over from the cottage cheese (by the way, it’s completely in vain that housewives pour it out - any dough turns out very tasty with it, and some even drink it like that for health, but this, in my opinion, is a perversion. :-), 2-3 eggs (one is enough), slaked soda, salt, sugar - half a teaspoon each, flour - to make a liquid pancake dough.
